Lanzarote Date & Lemon Flapjacks Empty Lanzarote Date & Lemon Flapjacks

Good all round bike/swim and run food.
350g dates; 6tbsp lemon juice; grated rind 2 lemons; 500gms big oats; 225gms wholemeal flour; 100gms dark brown sugar; 300gms butter. (can sub more oats for flour & dairy free spread for butter if liked)
Soften dates with lemon rind and juice slowly - add water if necessary so mix not too thick.
Melt butter, add all driy ingredients and mix thoroughly. Divide mix in half. Press half into 27 x 18cm shallow tray or similar, pressing down well, Cover with date mix, then top with rest of oat mix, press firmly. Bake in pre-heated oven 200C/180 fan/gas 6 for approx 30 mins. Cool slightly, then mark into the sizes you would like to eat - leave to cool in the tin. Will be crumbly, Freezes if any makes it to the freezer. Hope you enjoy. Laughing
